Ingredients
- fresh spinach - 200 grams
- feta cheese - 100 grams, crumbled
- all-purpose flour - 50 grams
- egg - 1 large
- green onion - 2, finely chopped
- fresh dill - 1 tablespoon, chopped
- fresh parsley - 1 tablespoon, chopped
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- olive oil - for frying
Steps
- Wash the spinach thoroughly and chop it finely. If using thick stems, remove them.
- In a large bowl, combine the chopped spinach, crumbled feta cheese, all-purpose flour, egg, green onion, dill, parsley, salt, and black pepper. Mix until well combined.
- Heat a non-stick skillet over medium heat and add a generous amount of olive oil.
- Using a spoon, scoop small amounts of the spinach mixture and form them into small patties.
- Carefully place the patties in the hot skillet and fry for about 3-4 minutes on each side or until golden brown and crispy.
- Once cooked, transfer the fritters to a plate lined with paper towels to drain excess oil.
- Serve warm, optionally with a side of yogurt or tzatziki for dipping.
