Ingredients

  • fresh spinach - 200 grams
  • feta cheese - 100 grams, crumbled
  • all-purpose flour - 50 grams
  • egg - 1 large
  • green onion - 2, finely chopped
  • fresh dill - 1 tablespoon, chopped
  • fresh parsley - 1 tablespoon, chopped
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • olive oil - for frying

Steps

  1. Wash the spinach thoroughly and chop it finely. If using thick stems, remove them.
  2. In a large bowl, combine the chopped spinach, crumbled feta cheese, all-purpose flour, egg, green onion, dill, parsley, salt, and black pepper. Mix until well combined.
  3. Heat a non-stick skillet over medium heat and add a generous amount of olive oil.
  4. Using a spoon, scoop small amounts of the spinach mixture and form them into small patties.
  5. Carefully place the patties in the hot skillet and fry for about 3-4 minutes on each side or until golden brown and crispy.
  6. Once cooked, transfer the fritters to a plate lined with paper towels to drain excess oil.
  7. Serve warm, optionally with a side of yogurt or tzatziki for dipping.
