Ingredients

  • Fresh spinach - 200 grams
  • Feta cheese - 100 grams, crumbled
  • Eggs - 2 large
  • Almond flour - 100 grams
  • Olive oil - 2 tablespoons
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Garlic - 1 clove, minced
  • Onion - 1 small, finely chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
  3. Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the almond flour, baking powder, salt, and black pepper.
  5. In a separate bowl, whisk the eggs and then add the crumbled feta cheese, spinach mixture, and the remaining olive oil. Mix until well combined.
