Ingredients

  • Fresh spinach - 200 grams
  • Feta cheese - 100 grams, crumbled
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 milliliters
  • Greek yogurt - 100 grams
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh dill - 1 tablespoon, chopped (optional)

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
  2. Add the fresh spinach to the pot and cook until wilted, about 3-4 minutes.
  3. Pour in the vegetable broth and bring the mixture to a simmer. Let it cook for 10 minutes.
  4. Remove the pot from heat and stir in the crumbled feta cheese and Greek yogurt until well combined.
  5. Use an immersion blender to purée the soup until smooth, or carefully transfer to a blender and blend in batches.
  6. Return the soup to low heat, add lemon juice, and season with salt and black pepper to taste. Stir in fresh dill if using.
  7. Serve hot, garnished with additional feta or dill if desired.
