Ingredients
- Fresh spinach - 200 grams
- Feta cheese - 100 grams, crumbled
- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 500 milliliters
- Greek yogurt - 100 grams
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh dill - 1 tablespoon, chopped (optional)
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
- Add the fresh spinach to the pot and cook until wilted, about 3-4 minutes.
- Pour in the vegetable broth and bring the mixture to a simmer. Let it cook for 10 minutes.
- Remove the pot from heat and stir in the crumbled feta cheese and Greek yogurt until well combined.
- Use an immersion blender to purée the soup until smooth, or carefully transfer to a blender and blend in batches.
- Return the soup to low heat, add lemon juice, and season with salt and black pepper to taste. Stir in fresh dill if using.
- Serve hot, garnished with additional feta or dill if desired.
