Ingredients

  • Fresh spinach - 200 grams
  • Feta cheese - 100 grams
  • Eggs - 2 large
  • Onion - 1 small, finely chopped
  • Olive oil - 2 tablespoons
  • Phyllo pastry sheets - 4 sheets
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Dried oregano - 1/2 teaspoon
  • Sesame seeds - 1 tablespoon (optional)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
  3. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.
  4. In a mixing bowl, crumble the feta cheese and combine it with the cooked spinach and onion mixture.
  5. Add the eggs, salt, black pepper, and oregano to the bowl, mixing well to combine all the ingredients thoroughly.
  6. Lay one sheet of phyllo pastry on a clean surface and brush lightly with olive oil. Place another sheet on top and brush again.
  7. Spoon half of the spinach and feta mixture along one short edge of the pastry, then roll it up tightly to form a log shape.
  8. Repeat the process with the remaining phyllo sheets and spinach mixture, forming another log.
  9. Place the rolled pies on a baking tray lined with parchment paper, brushing the tops with more olive oil and sprinkling with sesame seeds if desired.
  10. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
  11. Remove from the oven, let cool for a few minutes, then slice and serve warm.
