- Fresh spinach - 200 grams
- Feta cheese - 100 grams
- Eggs - 2 large
- Onion - 1 small, finely chopped
- Olive oil - 2 tablespoons
- Phyllo pastry sheets - 4 sheets
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Dried oregano - 1/2 teaspoon
- Sesame seeds - 1 tablespoon (optional)
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
- Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.
- In a mixing bowl, crumble the feta cheese and combine it with the cooked spinach and onion mixture.
- Add the eggs, salt, black pepper, and oregano to the bowl, mixing well to combine all the ingredients thoroughly.
- Lay one sheet of phyllo pastry on a clean surface and brush lightly with olive oil. Place another sheet on top and brush again.
- Spoon half of the spinach and feta mixture along one short edge of the pastry, then roll it up tightly to form a log shape.
- Repeat the process with the remaining phyllo sheets and spinach mixture, forming another log.
- Place the rolled pies on a baking tray lined with parchment paper, brushing the tops with more olive oil and sprinkling with sesame seeds if desired.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
- Remove from the oven, let cool for a few minutes, then slice and serve warm.
