Ingredients

  • Fresh spinach - 150 grams
  • Vegan feta cheese - 100 grams
  • Chickpeas - 1 can (400 grams, drained and rinsed)
  • Oats - 50 grams
  • Garlic - 2 cloves, minced
  • Red onion - 1 small, finely chopped
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole grain burger buns - 2
  • Fresh cucumber - 1/2, sliced
  • Tomato - 1, sliced
  • Lettuce leaves - 2

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a large mixing bowl, mash the drained chickpeas using a fork or potato masher until mostly smooth.
  3. Add the chopped spinach, vegan feta cheese, oats, minced garlic, chopped red onion, olive oil, lemon juice, dried oregano, salt, and black pepper to the chickpeas. Mix well until all ingredients are combined.
  4. Form the mixture into two patties and place them on the prepared baking tray.
  5. Bake the patties in the preheated oven for 20 minutes, flipping them halfway through to ensure even cooking.
  6. While the patties are baking, prepare the burger buns by toasting them lightly in a skillet or toaster.
  7. Once the patties are done, assemble the burgers by placing each patty on a bun, topped with fresh cucumber slices, tomato slices, and lettuce leaves.
