Ingredients
- Gluten-free phyllo dough - 6 sheets
- Fresh spinach - 200 grams, chopped
- Feta cheese - 100 grams, crumbled
- Onion - 1 small, finely chopped
- Garlic - 1 clove, minced
- Egg - 1 large
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Nutmeg - a pinch
- Water - as needed for brushing
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
- Add the minced garlic and chopped spinach to the skillet, cooking until the spinach wilts, approximately 2-3 minutes. Remove from heat and let cool slightly.
- In a bowl, combine the sautéed spinach mixture with the crumbled feta cheese, beaten egg, salt, black pepper, and nutmeg. Mix well.
- Lay one sheet of gluten-free phyllo dough on a clean surface, brush lightly with olive oil, and place another sheet on top. Repeat this process with a third sheet.
- Spoon a portion of the spinach and feta mixture along one edge of the layered phyllo, forming a line about 5 cm from the edge.
- Fold the phyllo over the filling to create a roll, then tuck in the ends to seal. Place the bougatsa seam-side down on a baking sheet lined with parchment paper.
- Repeat the process with the remaining phyllo sheets and filling.
- Brush the tops of the bougatsa with water and bake for 20-25 minutes or until golden brown and crispy.
- Allow to cool slightly before serving.
