- Vegetable broth - 250 milliliters
- Fresh basil - 10 grams, chopped
- Oregano - 1 teaspoon, dried
- Red chili flakes - 1/2 teaspoon (adjust to taste)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Feta cheese - 50 grams, crumbled (for serving)
- Lemon juice - 1 tablespoon (for serving)
Steps
- Heat olive oil in a medium saucepan over medium heat.
- Add the chopped red onion and diced red bell pepper; sauté for about 5 minutes until softened.
- Stir in the minced garlic and red chili flakes; cook for an additional minute until fragrant.
- Add the canned diced tomatoes (with juice), vegetable broth, dried oregano, salt, and black pepper.
