  • Vegetable broth - 250 milliliters
  • Fresh basil - 10 grams, chopped
  • Oregano - 1 teaspoon, dried
  • Red chili flakes - 1/2 teaspoon (adjust to taste)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 50 grams, crumbled (for serving)
  • Lemon juice - 1 tablespoon (for serving)

Steps

  1. Heat olive oil in a medium saucepan over medium heat.
  2. Add the chopped red onion and diced red bell pepper; sauté for about 5 minutes until softened.
  3. Stir in the minced garlic and red chili flakes; cook for an additional minute until fragrant.
  4. Add the canned diced tomatoes (with juice), vegetable broth, dried oregano, salt, and black pepper.
  5. Bring the mixture to a simmer and cook for 15 minutes, stirring occasionally.
  6. Remove from heat and stir in the fresh basil and lemon juice.
