Ingredients

  • Shrimp (peeled and deveined) - 300 grams
  • Olive oil - 3 tablespoons
  • Garlic (minced) - 2 cloves
  • Fresh lemon juice - 2 tablespoons
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Oregano (dried) - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Red bell pepper (cut into chunks) - 1 medium
  • Zucchini (sliced into rounds) - 1 medium
  • Wooden skewers - 4 (soaked in water for 30 minutes)

Steps

  1. In a bowl, combine olive oil, minced garlic, lemon juice, paprika, cayenne pepper, dried oregano, salt, and black pepper to create the marinade.
  2. Add the shrimp to the marinade, ensuring they are well-coated. Let marinate for 15 minutes.
  3. While the shrimp is marinating, prepare the vegetables by cutting the red bell pepper and zucchini into appropriate sizes for skewering.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated shrimp, red bell pepper chunks, and zucchini rounds onto the soaked wooden skewers, alternating between shrimp and vegetables.
  6. Once the grill is hot, place the skewers on the grill and cook for about 2-3 minutes on each side or until the shrimp are pink and opaque.
  7. Remove from the grill and serve immediately, garnished with fresh parsley or a squeeze of lemon if desired.
