Ingredients
- Pork shoulder - 300 grams
- Pork fatback - 100 grams
- Garlic - 4 cloves, minced
- Red wine vinegar - 2 tablespoons
- Fennel seeds - 1 teaspoon
- Oregano - 1 teaspoon, dried
- Paprika - 1 teaspoon
- Cayenne pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 50 ml
- Natural hog casings - 1 meter
Steps
- Soak the hog casings in water for at least 30 minutes, then rinse thoroughly under cold water.
- In a large bowl, combine the ground pork shoulder and pork fatback.
- Add minced garlic, red wine vinegar, fennel seeds, oregano, paprika, cayenne pepper, salt, and black pepper to the meat mixture.
- Mix the ingredients thoroughly by hand until well combined, then add the water gradually and mix until the mixture is sticky.
- Stuff the casings with the sausage mixture using a sausage stuffer, tying off the ends securely.
- Preheat your grill to medium-high heat.
- Grill the sausages for about 15-20 minutes, turning occasionally until they are cooked through and have a nice char.
- Let the sausages rest for 5 minutes before slicing and serving.
