Ingredients

  • Pork shoulder - 300 grams
  • Pork fatback - 100 grams
  • Garlic - 4 cloves, minced
  • Red wine vinegar - 2 tablespoons
  • Fennel seeds - 1 teaspoon
  • Oregano - 1 teaspoon, dried
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 50 ml
  • Natural hog casings - 1 meter

Steps

  1. Soak the hog casings in water for at least 30 minutes, then rinse thoroughly under cold water.
  2. In a large bowl, combine the ground pork shoulder and pork fatback.
  3. Add minced garlic, red wine vinegar, fennel seeds, oregano, paprika, cayenne pepper, salt, and black pepper to the meat mixture.
  4. Mix the ingredients thoroughly by hand until well combined, then add the water gradually and mix until the mixture is sticky.
  5. Stuff the casings with the sausage mixture using a sausage stuffer, tying off the ends securely.
  6. Preheat your grill to medium-high heat.
  7. Grill the sausages for about 15-20 minutes, turning occasionally until they are cooked through and have a nice char.
  8. Let the sausages rest for 5 minutes before slicing and serving.
