Ingredients

  • Red lentils - 150 grams
  • Water - 500 ml
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Cumin powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons (for frying)
  • Whole wheat flour - 50 grams (for binding)
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the red lentils under cold water and then combine them with 500 ml of water in a pot. Bring to a boil, then reduce heat and simmer for about 15 minutes until the lentils are soft and most of the water is absorbed.
  2. In a frying pan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Add the minced garlic and cook for an additional minute until fragrant. Remove from heat and let cool slightly.
  3. In a large mixing bowl, combine the cooked lentils, sautéed onion and garlic, chopped parsley, mint, cumin, smoked paprika, chili powder, salt, and black pepper. Mix well.
  4. Add the whole wheat flour and lemon juice to the lentil mixture. Stir until the mixture holds together. If it feels too wet, add a little more flour until it can be shaped into patties.
  5. Form the mixture into 4 patties, about 1 cm thick.
  6. In the same frying pan, heat the remaining tablespoon of olive oil over medium heat. Fry the patties for about 4-5 minutes on each side until golden brown and crispy.
  7. Serve the spicy lentil patties warm, with a side of vegan tzatziki or a fresh salad.
