Ingredients
- Red lentils - 150 grams
- Water - 500 ml
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Fresh parsley - 30 grams, chopped
- Fresh mint - 15 grams, chopped
- Cumin powder - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons (for frying)
- Whole wheat flour - 50 grams (for binding)
- Lemon juice - 1 tablespoon
Steps
- Rinse the red lentils under cold water and then combine them with 500 ml of water in a pot. Bring to a boil, then reduce heat and simmer for about 15 minutes until the lentils are soft and most of the water is absorbed.
- In a frying pan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Add the minced garlic and cook for an additional minute until fragrant. Remove from heat and let cool slightly.
- In a large mixing bowl, combine the cooked lentils, sautéed onion and garlic, chopped parsley, mint, cumin, smoked paprika, chili powder, salt, and black pepper. Mix well.
- Add the whole wheat flour and lemon juice to the lentil mixture. Stir until the mixture holds together. If it feels too wet, add a little more flour until it can be shaped into patties.
- Form the mixture into 4 patties, about 1 cm thick.
- In the same frying pan, heat the remaining tablespoon of olive oil over medium heat. Fry the patties for about 4-5 minutes on each side until golden brown and crispy.
- Serve the spicy lentil patties warm, with a side of vegan tzatziki or a fresh salad.
