- Red lentils - 100g
- Water - 250ml
- Olive oil - 1 tablespoon
- Garlic cloves - 2, minced
- Red onion - 1 small, finely chopped
- Bell pepper - 1/2 cup, finely chopped
- Carrot - 1 medium, grated
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Chili powder - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Oregano - 1 teaspoon, dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpea flour - 50g
- Whole grain burger buns - 2
- Tomato - 1, sliced
- Cucumber - 1/2, sliced
- Lettuce leaves - 2
Steps
- Rinse the red lentils under cold water and combine them with 250ml of water in a saucepan. Bring to a boil, then reduce the heat and simmer for about 15 minutes, or until the lentils are tender and water is absorbed.
- In a skillet, heat the olive oil over medium heat. Add the minced garlic, chopped red onion, and bell pepper, cooking until softened, about 5 minutes.
- Stir in the grated carrot, cumin, paprika, chili powder, oregano, salt, and black pepper. Cook for another 3 minutes until fragrant.
- In a large bowl, combine the cooked lentils, the sautéed vegetable mixture, fresh parsley, and chickpea flour. Mix well until combined; the mixture should hold together but not be too dry. Let it cool for a few minutes.
- Divide the lentil mixture into two equal portions and shape each into a patty, about 1.5 cm thick.
- Heat a non-stick skillet over medium heat and lightly oil. Cook the patties for about 4-5 minutes on each side, or until golden brown and crispy.
- To assemble the burgers, place a patty on each whole grain bun and top with lettuce, tomato, and cucumber slices. Serve immediately.
