Ingredients

  • Fresh corn on the cob - 2 ears
  • Olive oil - 2 tablespoons
  • Smoked paprika - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Garlic powder - 1 teaspoon
  • Sea salt - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Crushed red pepper flakes - 1/2 teaspoon (optional)

Steps

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, combine olive oil, smoked paprika, cayenne pepper, garlic powder, and sea salt to create a spice mixture.
  3. Peel back the husks of the corn without removing them completely and remove the silk. Brush the corn with the spice mixture, ensuring it’s evenly coated.
  4. Fold the husks back over the corn and soak the ears in water for about 10 minutes to prevent burning on the grill.
  5. Place the soaked corn on the preheated grill and cook for about 15 minutes, turning occasionally until the corn is tender and has grill marks.
  6. Remove the corn from the grill and let it cool slightly. Once cool enough to handle, carefully peel back the husks.
  7. Drizzle with lemon juice, sprinkle with chopped parsley, and add crushed red pepper flakes if desired. Serve immediately.
