Ingredients
- Fresh corn on the cob - 2 ears
- Olive oil - 2 tablespoons
- Smoked paprika - 1 teaspoon
- Cayenne pepper - 1/2 teaspoon
- Garlic powder - 1 teaspoon
- Sea salt - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Crushed red pepper flakes - 1/2 teaspoon (optional)
Steps
- Preheat the grill to medium-high heat.
- In a small bowl, combine olive oil, smoked paprika, cayenne pepper, garlic powder, and sea salt to create a spice mixture.
- Peel back the husks of the corn without removing them completely and remove the silk. Brush the corn with the spice mixture, ensuring it’s evenly coated.
- Fold the husks back over the corn and soak the ears in water for about 10 minutes to prevent burning on the grill.
- Place the soaked corn on the preheated grill and cook for about 15 minutes, turning occasionally until the corn is tender and has grill marks.
- Remove the corn from the grill and let it cool slightly. Once cool enough to handle, carefully peel back the husks.
- Drizzle with lemon juice, sprinkle with chopped parsley, and add crushed red pepper flakes if desired. Serve immediately.
