Ingredients

  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 small, diced
  • Red bell pepper - 1 medium, diced
  • Tomatoes - 2 medium, diced
  • Fish stock - 500 ml
  • White fish fillets (like cod or haddock) - 300 grams, cut into chunks
  • Chili flakes - 1 teaspoon
  • Oregano - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the minced garlic and diced onion, and sauté until the onion is translucent, about 3-4 minutes.
  3. Stir in the diced red bell pepper and cook for another 2-3 minutes until softened.
  4. Add the diced tomatoes, chili flakes, dried oregano, salt, and black pepper. Cook for 5 minutes, allowing the tomatoes to break down.
  5. Pour in the fish stock and bring the mixture to a simmer.
  6. Once simmering, gently add the fish chunks to the pot and cook for about 8-10 minutes, or until the fish is cooked through and flakes easily.
  7. Stir in the lemon juice and adjust seasoning if necessary.
  8. Serve hot, garnished with fresh parsley.
