- Canned black beans - 240 grams, drained and rinsed
- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Garlic - 3 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Red bell pepper - 1, diced
- Canned diced tomatoes - 400 grams
- Vegetable broth - 500 ml
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Cayenne pepper - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion, garlic, carrot, celery, and red bell pepper. Sauté for about 5-7 minutes until the vegetables are tender.
- Stir in the paprika, cumin, and cayenne pepper, cooking for another minute until fragrant.
- Add the canned diced tomatoes, chickpeas, black beans, and vegetable broth to the pot. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for 15-20 minutes.
- Season with salt and black pepper to taste.
- Serve hot, garnished with fresh parsley.
