- Basmati rice - 150 grams
- Water - 300 ml
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cinnamon stick - 1 piece
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Raisins - 50 grams
- Almonds - 30 grams, chopped (optional)
- Fresh parsley - 1 tablespoon, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes. Drain and set aside.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, cinnamon stick, ground cumin, ground coriander, salt, and black pepper to the saucepan. Stir and cook for another minute until fragrant.
- Pour in the 300 ml of water and bring to a boil. Once boiling, add the drained rice and raisins. Stir gently.
- Reduce the heat to low, cover the saucepan with a lid, and let it simmer for about 15 minutes, or until the rice is cooked and the water is absorbed.
- Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes. Fluff the rice with a fork before serving.
- Serve the spiced rice warm, garnished with chopped almonds (if using) and fresh parsley.
