Ingredients

  • Quail - 4 whole (approximately 300g each)
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Fresh oregano - 2 teaspoons, chopped
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chili flakes - 1/4 teaspoon
  • Fresh parsley - for garnish

Steps

  1. In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, paprika, cumin, salt, black pepper, and chili flakes to create a marinade.
  2. Add the quail to the marinade, ensuring they are well-coated. Cover and let marinate in the refrigerator for at least 30 minutes or up to 2 hours for more flavor.
  3. Preheat your grill to medium-high heat.
  4. Remove the quail from the marinade and let any excess marinade drip off.
  5. Place the quail on the grill and cook for about 10-12 minutes per side, or until the internal temperature reaches 75°C (165°F) and the skin is crispy.
  6. Once cooked, remove the quail from the grill and let them rest for 5 minutes.
  7. Garnish with fresh parsley before serving. Enjoy your Spiced Quail with a side of grilled vegetables or a fresh salad.
