Ingredients
- Green lentils - 150 grams
- Water - 500 milliliters
- Olive oil - 2 tablespoons
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, grated
- Fresh parsley - 2 tablespoons, chopped
- Dried oregano - 1 teaspoon
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Whole wheat breadcrumbs - 50 grams
- Feta cheese - 40 grams, crumbled
- Pita bread - 2 pieces
- Tzatziki sauce - for serving
- Sliced cucumber - for serving
- Sliced tomato - for serving
Steps
- Rinse the lentils under cold water, then place them in a pot with 500 milliliters of water. Bring to a boil, reduce heat, and simmer for about 20 minutes or until the lentils are tender. Drain and let them cool slightly.
- In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped red onion and minced garlic, sauté for about 3-4 minutes until the onion is translucent.
- Add the grated carrot, chopped parsley, oregano, cumin, paprika, salt, and black pepper to the skillet, cooking for another 2-3 minutes until the carrot is tender.
- In a mixing bowl, combine the cooked lentils, sautéed mixture, breadcrumbs, and crumbled feta cheese. Mix until well combined, then form the mixture into 2 burger patties.
- In the same skillet, add a little more olive oil if needed, and cook the patties for about 4-5 minutes on each side until golden brown and heated through.
- Meanwhile, warm the pita bread in a separate skillet or oven.
- Assemble the burgers by placing each lentil patty in a pita, topped with tzatziki sauce, sliced cucumber, and sliced tomato. Serve immediately.
