Ingredients

  • Ground lamb - 400 grams
  • Garlic - 2 cloves, minced
  • Red onion - 1 small, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Dried oregano - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Feta cheese - 50 grams, crumbled (optional for topping)
  • Lettuce leaves - 4 large, for wrapping

Steps

  1. In a large mixing bowl, combine the ground lamb, minced garlic, chopped red onion, parsley, oregano, cumin, coriander, salt, and black pepper.
  2. Mix the ingredients thoroughly with your hands until just combined, being careful not to overwork the meat.
  3. Form the mixture into 2 equal patties, about 2.5 cm thick.
  4. Heat a grill or skillet over medium-high heat and add the olive oil.
  5. Once hot, place the lamb patties on the grill/skillet and cook for 4-5 minutes on each side, or until they reach your desired doneness (internal temperature should be 70°C for medium).
  6. Remove the patties from the heat and let them rest for a few minutes.
  7. To serve, place each patty on a large lettuce leaf, top with crumbled feta cheese if desired, and wrap the lettuce around the patty.
