Ingredients

  • Cauliflower - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpea flour - 50 grams
  • Water - 2 tablespoons
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Burger buns - 2
  • Tzatziki sauce - 4 tablespoons
  • Lettuce - 2 leaves
  • Tomato - 1, sliced

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Chop the cauliflower into small florets and place them in a mixing bowl.
  3. Drizzle olive oil over the cauliflower and add garlic powder, cumin, paprika, oregano, salt, and black pepper. Toss until well coated.
  4. Spread the cauliflower on a baking sheet and roast for 20 minutes or until golden and tender, flipping halfway through.
  5. Once roasted, transfer the cauliflower to a food processor. Add chickpea flour, water, feta cheese, and parsley, then pulse until combined but still slightly chunky.
  6. Form the mixture into two patties.
  7. In a skillet over medium heat, add a little olive oil and cook the patties for about 4-5 minutes on each side, until golden brown.
  8. Toast the burger buns in the same skillet until lightly browned.
  9. Assemble the burgers by spreading tzatziki sauce on each bun, placing a lettuce leaf and a tomato slice, then adding the cauliflower patty on top.
  10. Serve warm and enjoy!
