- Cauliflower - 300 grams
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpea flour - 50 grams
- Water - 2 tablespoons
- Feta cheese - 50 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Burger buns - 2
- Tzatziki sauce - 4 tablespoons
- Lettuce - 2 leaves
- Tomato - 1, sliced
Steps
- Preheat the oven to 200°C (400°F).
- Chop the cauliflower into small florets and place them in a mixing bowl.
- Drizzle olive oil over the cauliflower and add garlic powder, cumin, paprika, oregano, salt, and black pepper. Toss until well coated.
- Spread the cauliflower on a baking sheet and roast for 20 minutes or until golden and tender, flipping halfway through.
- Once roasted, transfer the cauliflower to a food processor. Add chickpea flour, water, feta cheese, and parsley, then pulse until combined but still slightly chunky.
- Form the mixture into two patties.
- In a skillet over medium heat, add a little olive oil and cook the patties for about 4-5 minutes on each side, until golden brown.
- Toast the burger buns in the same skillet until lightly browned.
- Assemble the burgers by spreading tzatziki sauce on each bun, placing a lettuce leaf and a tomato slice, then adding the cauliflower patty on top.
- Serve warm and enjoy!
