  • Zucchini - 1 medium, diced
  • Canned diced tomatoes - 400 grams
  • Vegetable broth - 500 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Red chili flakes - 1/4 teaspoon (optional)

Steps

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the sliced spicy sausage and cook until browned, about 5 minutes.
  3. Stir in the onion and garlic, cooking until the onion is translucent, about 3 minutes.
  4. Add the chopped red and green bell peppers, diced carrot, and zucchini, and sauté for an additional 5 minutes.
