- Olive oil - 3 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Rice (short grain or medium grain) - 150 grams
- Vegetable broth - 500 milliliters
- Fresh spinach - 200 grams, washed and chopped
- Fresh dill - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Pepper - to taste
Steps
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the rice to the skillet, stirring to coat it with the oil, and toast for about 2 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is cooked and has absorbed the liquid.
- Once the rice is cooked, add the chopped spinach, dill, parsley, lemon juice, salt, and pepper. Stir well to combine and cook for an additional 5 minutes until the spinach is wilted.
- Remove from heat and let it sit for a few minutes before serving.
