Ingredients

  • Olive oil - 3 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Rice (short grain or medium grain) - 150 grams
  • Vegetable broth - 500 milliliters
  • Fresh spinach - 200 grams, washed and chopped
  • Fresh dill - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add the rice to the skillet, stirring to coat it with the oil, and toast for about 2 minutes.
  4. Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is cooked and has absorbed the liquid.
  5. Once the rice is cooked, add the chopped spinach, dill, parsley, lemon juice, salt, and pepper. Stir well to combine and cook for an additional 5 minutes until the spinach is wilted.
  6. Remove from heat and let it sit for a few minutes before serving.
