- Fresh spinach - 300 grams
- Feta cheese - 150 grams, crumbled
- Phyllo pastry sheets - 6 sheets
- Greek yogurt - 200 grams
- Egg - 1 large
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Dill - 1 tablespoon, fresh or 1 teaspoon dried
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, cooking until softened, about 5 minutes.
- Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let it cool slightly.
- In a mixing bowl, combine the crumbled feta cheese, egg, dill, salt, and black pepper. Stir in the cooled spinach mixture until well combined.
- Lay out one sheet of phyllo pastry on a clean surface and brush lightly with olive oil. Place another sheet on top and brush with oil again. Repeat with a third sheet.
- Spoon a portion of the spinach and feta filling along one edge of the layered phyllo sheets, then fold the sides over the filling and roll it up tightly to form a log. Place seam-side down on a baking sheet lined with parchment paper.
- Repeat the process with the remaining phyllo sheets and filling to make a second roll.
- Brush the tops of the rolls with any remaining olive oil and bake in the preheated oven for 25-30 minutes, or until golden brown and crispy.
- While the spanakopita is baking, serve the Greek yogurt in bowls, optionally drizzled with a little olive oil and sprinkled with salt.
- Once the spanakopita is done, let it cool for a few minutes before slicing and serving alongside the yogurt.
