Ingredients

  • Fresh spinach - 300 grams
  • Feta cheese - 150 grams, crumbled
  • Phyllo pastry sheets - 6 sheets
  • Greek yogurt - 200 grams
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Dill - 1 tablespoon, fresh or 1 teaspoon dried

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, cooking until softened, about 5 minutes.
  3. Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let it cool slightly.
  4. In a mixing bowl, combine the crumbled feta cheese, egg, dill, salt, and black pepper. Stir in the cooled spinach mixture until well combined.
  5. Lay out one sheet of phyllo pastry on a clean surface and brush lightly with olive oil. Place another sheet on top and brush with oil again. Repeat with a third sheet.
  6. Spoon a portion of the spinach and feta filling along one edge of the layered phyllo sheets, then fold the sides over the filling and roll it up tightly to form a log. Place seam-side down on a baking sheet lined with parchment paper.
  7. Repeat the process with the remaining phyllo sheets and filling to make a second roll.
  8. Brush the tops of the rolls with any remaining olive oil and bake in the preheated oven for 25-30 minutes, or until golden brown and crispy.
  9. While the spanakopita is baking, serve the Greek yogurt in bowls, optionally drizzled with a little olive oil and sprinkled with salt.
  10. Once the spanakopita is done, let it cool for a few minutes before slicing and serving alongside the yogurt.
