- Phyllo dough - 6 sheets
- Fresh spinach - 200 grams, chopped
- Tofu - 150 grams, crumbled
- Nutritional yeast - 2 tablespoons
- Fresh dill - 2 tablespoons, chopped
- Green onions - 2, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
- In a mixing bowl, combine the crumbled tofu, nutritional yeast, chopped dill, green onions, salt, black pepper, and lemon juice. Mix well.
- Add the wilted spinach mixture to the tofu mixture and stir until fully combined.
- Lay one sheet of phyllo dough on a clean surface and brush lightly with olive oil. Place another sheet on top and brush again. Repeat with a total of 3 sheets.
- Place a portion of the spinach filling along one edge of the phyllo dough, then fold the sides over and roll tightly to form a log. Repeat with the remaining phyllo and filling.
- Place the rolled spanakopita on a baking sheet lined with parchment paper. Brush the tops with olive oil.
- Bake in the preheated oven for 25-30 minutes or until golden brown and crispy.
- Remove from the oven and let cool for a few minutes before serving.
