Ingredients

  • Phyllo dough - 6 sheets
  • Fresh spinach - 200 grams, chopped
  • Tofu - 150 grams, crumbled
  • Nutritional yeast - 2 tablespoons
  • Fresh dill - 2 tablespoons, chopped
  • Green onions - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the crumbled tofu, nutritional yeast, chopped dill, green onions, salt, black pepper, and lemon juice. Mix well.
  5. Add the wilted spinach mixture to the tofu mixture and stir until fully combined.
  6. Lay one sheet of phyllo dough on a clean surface and brush lightly with olive oil. Place another sheet on top and brush again. Repeat with a total of 3 sheets.
  7. Place a portion of the spinach filling along one edge of the phyllo dough, then fold the sides over and roll tightly to form a log. Repeat with the remaining phyllo and filling.
  8. Place the rolled spanakopita on a baking sheet lined with parchment paper. Brush the tops with olive oil.
  9. Bake in the preheated oven for 25-30 minutes or until golden brown and crispy.
  10. Remove from the oven and let cool for a few minutes before serving.
