Ingredients

  • Fresh spinach - 200 grams
  • Feta cheese - 100 grams, crumbled
  • Phyllo pastry sheets - 6 sheets
  • Green onions - 2, finely chopped
  • Egg - 1, beaten
  • Olive oil - 2 tablespoons
  • Dill - 1 tablespoon, fresh or 1 teaspoon dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Water - 1 tablespoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large pan over medium heat, add 1 tablespoon of olive oil. Sauté the green onions until soft, about 3 minutes.
  3. Add the fresh spinach to the pan and cook until wilted, approximately 5 minutes. Remove from heat and let cool.
  4. In a mixing bowl, combine the cooled spinach mixture, crumbled feta, beaten egg, dill, salt, and black pepper. Mix well until all ingredients are incorporated.
  5. Lay out one sheet of phyllo pastry on a clean surface and brush lightly with olive oil. Place a second sheet on top and repeat the brushing.
  6. Spoon half of the spinach filling along one edge of the phyllo pastry, leaving space on the sides. Fold the sides over the filling and roll up tightly to form a log.
  7. Repeat the process with the remaining phyllo sheets and spinach filling to create a second roll.
  8. Place the spanakopita rolls on a baking sheet lined with parchment paper. Brush the tops with a little olive oil and sprinkle with water.
  9. Bake in the preheated oven for 25-30 minutes or until golden brown and crispy.
  10. Remove from the oven, let cool for a few minutes, and serve warm.
