Ingredients
- Almond flour - 150 grams
- Coconut oil - 50 grams, melted
- Egg - 1 large
- Salt - 1/2 teaspoon
- Fresh spinach - 200 grams, chopped
- Feta cheese - 100 grams, crumbled
- Green onions - 2, finely chopped
- Garlic - 2 cloves, minced
- Black pepper - 1/4 teaspoon
- Dried oregano - 1/2 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the almond flour, melted coconut oil, egg, and salt to form a dough.
- Press the dough into a 20 cm (8 inch) pie dish evenly across the bottom and up the sides. Prick the bottom with a fork and bake for 10 minutes.
- While the crust is baking, heat a skillet over medium heat and add a splash of water to wilt the chopped spinach, cooking for 3-4 minutes.
- In a bowl, mix the wilted spinach, crumbled feta cheese, chopped green onions, minced garlic, black pepper, and dried oregano until well combined.
- Remove the crust from the oven and fill it with the spinach and feta mixture, spreading it evenly.
- Return the pie to the oven and bake for an additional 25 minutes, or until the filling is set and the crust is golden.
- Allow to cool for a few minutes before slicing and serving.
