Ingredients

  • Almond flour - 150 grams
  • Coconut oil - 50 grams, melted
  • Egg - 1 large
  • Salt - 1/2 teaspoon
  • Fresh spinach - 200 grams, chopped
  • Feta cheese - 100 grams, crumbled
  • Green onions - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Black pepper - 1/4 teaspoon
  • Dried oregano - 1/2 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the almond flour, melted coconut oil, egg, and salt to form a dough.
  3. Press the dough into a 20 cm (8 inch) pie dish evenly across the bottom and up the sides. Prick the bottom with a fork and bake for 10 minutes.
  4. While the crust is baking, heat a skillet over medium heat and add a splash of water to wilt the chopped spinach, cooking for 3-4 minutes.
  5. In a bowl, mix the wilted spinach, crumbled feta cheese, chopped green onions, minced garlic, black pepper, and dried oregano until well combined.
  6. Remove the crust from the oven and fill it with the spinach and feta mixture, spreading it evenly.
  7. Return the pie to the oven and bake for an additional 25 minutes, or until the filling is set and the crust is golden.
  8. Allow to cool for a few minutes before slicing and serving.
