- Almond flour - 100 grams
- Butter, melted - 30 grams
- Egg - 1 large
- Fresh spinach, chopped - 150 grams
- Feta cheese, crumbled - 100 grams
- Cream cheese - 50 grams
- Green onion, chopped - 2 tablespoons
- Garlic, minced - 1 clove
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, melted butter, and egg. Mix until a dough forms.
- Press the dough into the bottom and sides of a greased muffin tin to create cups. Bake for 10 minutes until lightly golden.
- Meanwhile, in a skillet over medium heat, add olive oil and sauté garlic until fragrant.
- Add chopped spinach and cook until wilted, about 3 minutes. Remove from heat.
- In a large bowl, combine the sautéed spinach, crumbled feta, cream cheese, chopped green onion, oregano, salt, and black pepper. Mix well.
- Once the almond flour cups are baked, remove them from the oven and fill each cup with the spinach and cheese mixture.
- Return the filled cups to the oven and bake for an additional 15 minutes until the filling is set and slightly golden.
- Let cool for a few minutes before serving.
