Ingredients

  • Almond flour - 100 grams
  • Butter, melted - 30 grams
  • Egg - 1 large
  • Fresh spinach, chopped - 150 grams
  • Feta cheese, crumbled - 100 grams
  • Cream cheese - 50 grams
  • Green onion, chopped - 2 tablespoons
  • Garlic, minced - 1 clove
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, melted butter, and egg. Mix until a dough forms.
  3. Press the dough into the bottom and sides of a greased muffin tin to create cups. Bake for 10 minutes until lightly golden.
  4. Meanwhile, in a skillet over medium heat, add olive oil and sauté garlic until fragrant.
  5. Add chopped spinach and cook until wilted, about 3 minutes. Remove from heat.
  6. In a large bowl, combine the sautéed spinach, crumbled feta, cream cheese, chopped green onion, oregano, salt, and black pepper. Mix well.
  7. Once the almond flour cups are baked, remove them from the oven and fill each cup with the spinach and cheese mixture.
  8. Return the filled cups to the oven and bake for an additional 15 minutes until the filling is set and slightly golden.
  9. Let cool for a few minutes before serving.
