Spaghetti Squash

Ingredients

  • Spaghetti squash - 1 medium (about 1 kg)
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Cherry tomatoes - 200 grams, halved
  • Kalamata olives - 100 grams, pitted and sliced
  • Feta cheese - 50 grams, crumbled (optional for strict Paleo)
  • Fresh spinach - 100 grams
  • Oregano - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle the inside of the squash with 1 tablespoon of olive oil, and season with salt and pepper.
  4. Place the squash halves cut-side down on a baking sheet and roast for 30-35 minutes, or until tender.
  5. While the squash is roasting, heat the remaining tablespoon of olive oil in a large skillet over medium heat.
  6. Add minced garlic to the skillet and sauté for 1 minute until fragrant.
  7. Add the halved cherry tomatoes and Kalamata olives to the skillet, cooking for about 5 minutes until the tomatoes start to soften.
  8. Stir in the fresh spinach and dried oregano, cooking until the spinach is wilted, about 2-3 minutes.
  9. Once the squash is done, remove it from the oven and use a fork to scrape out the flesh into spaghetti-like strands.
  10. Combine the spaghetti squash strands with the tomato and spinach mixture in the skillet, mixing well to combine.
  11. Serve hot, topped with crumbled feta cheese and garnished with chopped parsley.
