  • Black pepper - 1/2 teaspoon
  • Pita bread - 2 pieces (Paleo-friendly if available)
  • Fresh parsley - 2 tablespoons, chopped
  • Tomato - 1 medium, diced
  • Cucumber - 1 small, diced

Steps

  1. In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper to create a marinade.
  2. Add the cubed chicken breast to the marinade, ensuring all pieces are well coated. Cover and let marinate in the refrigerator for at least 15 minutes.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Thread the marinated chicken onto skewers, leaving some space between each piece.
  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  6. While the chicken is cooking, warm the pita bread on the grill for 1-2 minutes on each side.
  7. Once the chicken is done, remove it from the grill and let it rest for a couple of minutes.
  8. Serve the chicken souvlaki in the warm pita, topped with diced tomatoes, cucumbers, and chopped parsley.
