Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut it into 1-inch cubes.
- Chop the red bell pepper, zucchini, and red onion into similar 1-inch pieces.
- In a bowl, mix olive oil, lemon juice, garlic powder, oregano, salt, and black pepper to create a marinade.
- Add the tofu and chopped vegetables to the marinade, tossing to coat evenly. Let it marinate for at least 10 minutes.
- Preheat a grill or grill pan over medium heat.
- Thread the marinated tofu and vegetables onto skewers, alternating between tofu and vegetables.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
- Warm the pita bread on the grill for 1-2 minutes on each side.
