Ingredients

  • Firm tofu - 200 grams

  • Zucchini - 1 medium
  • Red onion - 1 medium
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Pita bread - 2 pieces
  • Fresh parsley - 2 tablespoons, chopped
  • Tahini - 2 tablespoons

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into 1-inch cubes.
  2. Chop the red bell pepper, zucchini, and red onion into similar 1-inch pieces.
  3. In a bowl, mix olive oil, lemon juice, garlic powder, oregano, salt, and black pepper to create a marinade.
  4. Add the tofu and chopped vegetables to the marinade, tossing to coat evenly. Let it marinate for at least 10 minutes.
  5. Preheat a grill or grill pan over medium heat.
  6. Thread the marinated tofu and vegetables onto skewers, alternating between tofu and vegetables.
  7. Grill the skewers for about 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  8. Warm the pita bread on the grill for 1-2 minutes on each side.
  9. Serve the skewers with tahini drizzled over and a sprinkle of chopped parsley, alongside warm pita.
