- Vegetable broth - 500 milliliters
- Tomatoes - 1 medium, diced
- Red bell pepper - 1/2, diced
- Zucchini - 1 small, diced
- Kalamata olives - 50 grams, pitted and halved
- Feta cheese - 50 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Water - 500 milliliters
Steps
- In a bowl, combine the chicken breast with olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Marinate for at least 10 minutes.
- In a medium pot, bring the vegetable broth and water to a simmer over medium heat.
- Add the marinated chicken to the pot and cook for about 10 minutes, or until fully cooked through. Remove the chicken and let it rest for a few minutes.
- In the same pot, add the diced tomatoes, red bell pepper, and zucchini. Cook for an additional 5-7 minutes, until the vegetables are tender.
- While the vegetables are cooking, slice the chicken into bite-sized pieces.
- Return the sliced chicken to the pot along with the Kalamata olives. Stir to combine and heat through for another 2-3 minutes.
- Serve the soup hot, topped with crumbled feta cheese and chopped fresh parsley.
