  • Chicken breast - 200 grams

  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable broth - 500 milliliters
  • Tomatoes - 1 medium, diced
  • Red bell pepper - 1/2, diced
  • Zucchini - 1 small, diced
  • Kalamata olives - 50 grams, pitted and halved
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Water - 500 milliliters

Steps

  1. In a bowl, combine the chicken breast with olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Marinate for at least 10 minutes.
  2. In a medium pot, bring the vegetable broth and water to a simmer over medium heat.
  3. Add the marinated chicken to the pot and cook for about 10 minutes, or until fully cooked through. Remove the chicken and let it rest for a few minutes.
  4. In the same pot, add the diced tomatoes, red bell pepper, and zucchini. Cook for an additional 5-7 minutes, until the vegetables are tender.
  5. While the vegetables are cooking, slice the chicken into bite-sized pieces.
  6. Return the sliced chicken to the pot along with the Kalamata olives. Stir to combine and heat through for another 2-3 minutes.
  7. Serve the soup hot, topped with crumbled feta cheese and chopped fresh parsley.
