- Pork tenderloin - 300 grams
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 2 cloves, minced
- Oregano - 1 teaspoon, dried
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Bell pepper - 1 medium, cut into chunks
- Red onion - 1 small, cut into chunks
- Zucchini - 1 medium, sliced
- For Tzatziki: Greek yogurt - 150 grams, Cucumber - 1/2 small, grated, Garlic - 1 clove, minced, Dill - 1 teaspoon, Olive oil - 1 teaspoon, Lemon juice - 1 teaspoon, Salt - to taste
Steps
- 1. Cut the pork tenderloin into 2.5 cm cubes and place them in a bowl.
- 2. In a separate bowl, mix together olive oil, lemon juice, minced garlic, oregano, paprika, salt, and black pepper.
- 3. Pour the marinade over the pork cubes and let them marinate for at least 15 minutes.
- 4. While the pork is marinating, prepare the tzatziki by mixing Greek yogurt, grated cucumber, minced garlic, dill, olive oil, lemon juice, and salt in a bowl. Set aside in the refrigerator.
- 5. Preheat your grill or grill pan over medium-high heat.
- 6. Thread the marinated pork, bell pepper, red onion, and zucchini onto skewers, alternating the ingredients.
- 7. Grill the skewers for about 10-12 minutes, turning occasionally until the pork is cooked through and has nice grill marks.
- 8. Remove the skewers from the grill and let them rest for a couple of minutes before serving.
- 9. Serve the souvlaki skewers warm with the tzatziki sauce on the side.
