Ingredients

  • Cauliflower - 400 grams
  • Mozzarella cheese - 200 grams, shredded
  • Parmesan cheese - 50 grams, grated
  • Egg - 1 large
  • Oregano - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Chicken breast - 200 grams, diced
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Paprika - 1 teaspoon
  • Cucumber - 50 grams, diced
  • Tomato - 50 grams, diced
  • Red onion - 30 grams, thinly sliced
  • Feta cheese - 30 grams, crumbled
  • Fresh parsley - 1 tablespoon, chopped

Steps

  1. Preheat your oven to 200°C (400°F).
  2. To make the crust, steam the cauliflower until tender, then let it cool slightly. Once cooled, blend it in a food processor until it resembles rice.
  3. Place the processed cauliflower in a clean kitchen towel and squeeze out excess moisture.
  4. In a bowl, combine the cauliflower, shredded mozzarella, grated Parmesan, egg, oregano, garlic powder, salt, and pepper. Mix until a dough forms.
  5. Line a baking sheet with parchment paper and spread the cauliflower mixture into a round pizza crust, about 1/2 inch thick.
  6. Bake the crust in the preheated oven for 20 minutes or until golden brown.
  7. While the crust is baking, marinate the diced chicken in olive oil, lemon juice, paprika, salt, and pepper for at least 10 minutes.
  8. In a skillet over medium heat, cook the marinated chicken for about 5-7 minutes, until fully cooked and lightly browned.
  9. Once the crust is done, remove it from the oven and top with cooked chicken, diced cucumber, diced tomato, and sliced red onion.
  10. Sprinkle crumbled feta cheese and chopped parsley over the top.
  11. Return the pizza to the oven for an additional 5 minutes to warm the toppings.
  12. Slice and serve hot.
