- Chicken breast - 200 grams, diced
- Olive oil - 1 tablespoon
- Lemon juice - 1 tablespoon

- Red onion - 30 grams, thinly sliced
- Feta cheese - 30 grams, crumbled
- Fresh parsley - 1 tablespoon, chopped
Steps
- Preheat your oven to 200°C (400°F).
- To make the crust, steam the cauliflower until tender, then let it cool slightly. Once cooled, blend it in a food processor until it resembles rice.
- Place the processed cauliflower in a clean kitchen towel and squeeze out excess moisture.
- In a bowl, combine the cauliflower, shredded mozzarella, grated Parmesan, egg, oregano, garlic powder, salt, and pepper. Mix until a dough forms.
- Line a baking sheet with parchment paper and spread the cauliflower mixture into a round pizza crust, about 1/2 inch thick.
- Bake the crust in the preheated oven for 20 minutes or until golden brown.
- While the crust is baking, marinate the diced chicken in olive oil, lemon juice, paprika, salt, and pepper for at least 10 minutes.
- In a skillet over medium heat, cook the marinated chicken for about 5-7 minutes, until fully cooked and lightly browned.
- Once the crust is done, remove it from the oven and top with cooked chicken, diced cucumber, diced tomato, and sliced red onion.
- Sprinkle crumbled feta cheese and chopped parsley over the top.
