Ingredients

  • Chicken breast - 250 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 small, diced
  • Red onion - 1 small, chopped
  • Cherry tomatoes - 150 grams, halved
  • Feta cheese - 100 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, mix olive oil, lemon juice, minced garlic, oregano, paprika, salt, and black pepper to create a marinade.
  3. Cut the chicken breast into bite-sized cubes and add to the marinade, tossing to coat well. Let it marinate for at least 15 minutes.
  4. While the chicken is marinating, prepare the vegetables by dicing the red bell pepper, zucchini, and chopping the red onion.
  5. In a baking dish, combine the marinated chicken, red bell pepper, zucchini, red onion, and cherry tomatoes. Toss to distribute the ingredients evenly.
  6. Sprinkle the crumbled feta cheese over the top of the mixture.
  7. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
  8. Remove the foil and bake for an additional 10 minutes or until the chicken is cooked through and slightly golden.
  9. Garnish with fresh parsley before serving.
