Ingredients

  • Chicken breast - 300 grams
  • Red bell pepper - 1 medium
  • Zucchini - 1 medium
  • Red onion - 1 medium
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole wheat pita bread - 2 pieces
  • Greek yogurt - 100 grams
  • Cucumber - 1/2 medium, grated
  • Fresh dill - 1 tablespoon, chopped

Steps

  1. Cut the chicken breast into 2.5 cm cubes and place them in a bowl.
  2. In a separate small bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper to create a marinade.
  3. Pour the marinade over the chicken cubes and let them marinate for at least 15 minutes.
  4. While the chicken marinates, chop the red bell pepper, zucchini, and red onion into 2.5 cm pieces.
  5. Preheat a grill or grill pan over medium-high heat.
  6. Thread the marinated chicken and chopped vegetables onto skewers, alternating between chicken and vegetables.
  7. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has grill marks.
  8. In the meantime, prepare the tzatziki sauce by mixing Greek yogurt, grated cucumber, fresh dill, and a pinch of salt in a bowl.
  9. Once the skewers are done, remove them from the grill and let them rest for a few minutes.
  10. Warm the whole wheat pita bread on the grill for 1-2 minutes, then serve with the grilled skewers and tzatziki sauce.
