  • Erythritol - 50 grams
  • Gelatin powder - 10 grams
  • Water - 200 milliliters
  • Vanilla extract - 1 teaspoon
  • Chopped walnuts - 30 grams
  • Cocoa powder - 2 tablespoons (for dusting)
  • Salt - a pinch

Steps

  1. In a small saucepan, combine the water and erythritol, and heat over medium heat until the erythritol is fully dissolved.
  2. Once dissolved, sprinkle the gelatin powder over the mixture and stir until fully combined. Remove from heat.
  3. In a mixing bowl, combine almond flour, a pinch of salt, and the vanilla extract. Gradually add the warm erythritol-gelatin mixture to the dry ingredients, stirring until a dough forms.
  4. Fold in the chopped walnuts until evenly distributed throughout the dough.
  5. Transfer the dough into a greased square or rectangular mold and press it down evenly. Refrigerate for at least 2 hours to allow it to set.
  6. Once set, remove from the mold and cut into bite-sized cubes. Dust the pieces with cocoa powder to prevent sticking and add flavor.
  7. Serve chilled or at room temperature, enjoying the chewy, nutty goodness of your homemade Soutzouk Loukou.
