- Garlic - 3 cloves, minced
- Green bell pepper - 1, diced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Tomatoes - 400 grams, diced (canned or fresh)
- Vegetable broth - 500 milliliters
- Chickpeas - 240 grams, cooked (1 can)
- Spinach - 100 grams, fresh
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Heat olive oil in a large pot over medium heat.
- Add diced onion, garlic, green bell pepper, carrot, and celery. Sauté for about 5 minutes until vegetables are softened.
- Stir in the diced tomatoes and cook for another 5 minutes, allowing the tomatoes to break down.
- Pour in the vegetable broth and bring to a simmer.
- Add the cooked chickpeas, oregano, salt, and black pepper. Let the soup simmer for 10-15 minutes.
- Stir in the fresh spinach and cook until wilted, about 2 minutes.
- Remove from heat and stir in lemon juice.
- Serve hot, garnished with fresh parsley.
