Ingredients

  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Green bell pepper - 1, diced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Tomatoes - 400 grams, diced (canned or fresh)
  • Vegetable broth - 500 milliliters
  • Chickpeas - 240 grams, cooked (1 can)
  • Spinach - 100 grams, fresh
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion, garlic, green bell pepper, carrot, and celery. Sauté for about 5 minutes until vegetables are softened.
  3. Stir in the diced tomatoes and cook for another 5 minutes, allowing the tomatoes to break down.
  4. Pour in the vegetable broth and bring to a simmer.
  5. Add the cooked chickpeas, oregano, salt, and black pepper. Let the soup simmer for 10-15 minutes.
  6. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  7. Remove from heat and stir in lemon juice.
  8. Serve hot, garnished with fresh parsley.
