Ingredients
- phyllo pastry - 4 sheets
- fresh spinach - 200 grams
- firm tofu - 100 grams
- nutritional yeast - 2 tablespoons
- lemon juice - 1 tablespoon
- dill - 1 tablespoon, chopped
- green onion - 1, chopped
- olive oil - 3 tablespoons
- salt - 1/2 teaspoon
- pepper - 1/4 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a large bowl, crumble the firm tofu and mix in nutritional yeast, lemon juice, dill, chopped green onion, salt, and pepper until well combined.
- Wash and roughly chop the fresh spinach, then sauté it in a pan with 1 tablespoon of olive oil until wilted, about 3-4 minutes. Let it cool slightly before mixing it into the tofu mixture.
- Lay out one sheet of phyllo pastry on a clean surface and brush it lightly with olive oil. Place another sheet on top and brush again with olive oil.
- Spoon a portion of the spinach and tofu mixture along one edge of the phyllo, then fold over the sides and roll it up tightly to form a log.
- Repeat the process with the remaining phyllo sheets and filling, placing the logs on a baking sheet lined with parchment paper.
- Brush the tops of the logs with the remaining olive oil and bake in the preheated oven for about 20 minutes, or until the phyllo is golden brown and crispy.
- Remove from the oven and let cool for a few minutes before slicing and serving.
