- Vegan butter (melted) - 2 tablespoons
- Powdered sugar (for dusting) - 1 tablespoon
- Water - 50 milliliters
Steps
- Preheat the oven to 180°C (350°F).
- In a bowl, mix ground almonds, brown sugar, and cinnamon until well combined.
- Lay one sheet of phyllo pastry on a clean surface and brush it lightly with olive oil and melted vegan butter.
- Place another sheet of phyllo on top and repeat the brushing process.
- Spoon a portion of the almond mixture along one edge of the phyllo sheets, leaving a small border.
- Roll the phyllo tightly around the filling to form a log shape and seal the edges with a bit of water.
- Repeat the process with the remaining sheets and filling.
- Place the rolled Sfinakia on a baking tray lined with parchment paper and brush the tops with olive oil.
- Bake in the preheated oven for 15-20 minutes or until golden and crispy.
- Remove from the oven, let cool slightly, and dust with powdered sugar before serving.
