Ingredients

  • All-purpose flour - 150 grams
  • Almonds (finely ground) - 50 grams
  • Olive oil - 50 ml
  • Maple syrup - 60 ml
  • Fresh orange juice - 30 ml
  • Baking powder - 1 teaspoon
  • Cinnamon - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Powdered sugar - for dusting

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a large mixing bowl, combine the all-purpose flour, finely ground almonds, baking powder, and cinnamon.
  3. In a separate bowl, whisk together the olive oil, maple syrup, fresh orange juice, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until a dough forms. If too sticky, add a little more flour.
  5. Divide the dough into small balls (about 30 grams each) and flatten them into discs.
  6. Place the discs on the prepared baking tray, leaving space between them.
  7. Bake in the preheated oven for 15-20 minutes or until lightly golden.
  8. Allow to cool on a wire rack, then dust with powdered sugar before serving.
