- All-purpose flour - 150 grams
- Almonds (finely ground) - 50 grams
- Olive oil - 50 ml
- Maple syrup - 60 ml
- Fresh orange juice - 30 ml
- Baking powder - 1 teaspoon
- Cinnamon - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Powdered sugar - for dusting
Steps
- Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
- In a large mixing bowl, combine the all-purpose flour, finely ground almonds, baking powder, and cinnamon.
- In a separate bowl, whisk together the olive oil, maple syrup, fresh orange juice, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms. If too sticky, add a little more flour.
- Divide the dough into small balls (about 30 grams each) and flatten them into discs.
- Place the discs on the prepared baking tray, leaving space between them.
- Bake in the preheated oven for 15-20 minutes or until lightly golden.
- Allow to cool on a wire rack, then dust with powdered sugar before serving.
