Ingredients
- Seaweed (nori or wakame) - 20g
- Fresh spinach - 200g
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Fresh dill - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Olive oil - 2 tablespoons
- Vegan puff pastry - 4 sheets
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - 1 tablespoon (for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- If using dried seaweed, soak it in warm water for 10 minutes until softened, then drain and chop finely.
- In a pan, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
- Stir in the chopped spinach and seaweed, cooking until the spinach has wilted, about 3-4 minutes.
- Remove from heat and mix in the chopped dill, parsley, lemon juice, salt, and pepper to taste. Allow the filling to cool slightly.
- On a clean surface, lay one sheet of puff pastry and brush with olive oil. Place another sheet on top and brush again. Repeat with two more sheets.
- Place a portion of the filling along one edge of the layered pastry. Roll the pastry tightly to encase the filling, creating a log shape.
- Cut the rolled pastry into about 4 equal pieces and place them on a baking sheet lined with parchment paper.
- Brush the tops with a little olive oil and sprinkle with sesame seeds.
- Bake in the preheated oven for 20-25 minutes or until golden brown and crisp.
- Remove from the oven and let cool for a few minutes before serving.
