Ingredients

  • Seaweed (nori or wakame) - 20g
  • Fresh spinach - 200g
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh dill - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Vegan puff pastry - 4 sheets
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. If using dried seaweed, soak it in warm water for 10 minutes until softened, then drain and chop finely.
  3. In a pan, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  4. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
  5. Stir in the chopped spinach and seaweed, cooking until the spinach has wilted, about 3-4 minutes.
  6. Remove from heat and mix in the chopped dill, parsley, lemon juice, salt, and pepper to taste. Allow the filling to cool slightly.
  7. On a clean surface, lay one sheet of puff pastry and brush with olive oil. Place another sheet on top and brush again. Repeat with two more sheets.
  8. Place a portion of the filling along one edge of the layered pastry. Roll the pastry tightly to encase the filling, creating a log shape.
  9. Cut the rolled pastry into about 4 equal pieces and place them on a baking sheet lined with parchment paper.
  10. Brush the tops with a little olive oil and sprinkle with sesame seeds.
  11. Bake in the preheated oven for 20-25 minutes or until golden brown and crisp.
  12. Remove from the oven and let cool for a few minutes before serving.
