Ingredients

  • Tomato - 200 grams, diced
  • Red bell pepper - 1, diced
  • Dried oregano - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the olive oil in a medium skillet over medium heat.
  2. Add the minced garlic and diced red bell pepper to the skillet, sautéing for about 3 minutes until softened.
  3. Stir in the diced tomatoes, dried oregano, and black pepper. Cook for another 5 minutes, allowing the sauce to thicken.
  4. Add the shrimp to the skillet, cooking for about 5-7 minutes until they turn pink and are cooked through.
  5. Remove the skillet from heat and sprinkle the crumbled feta cheese evenly over the seafood.
  6. Place the skillet under a preheated broiler for 2-3 minutes, or until the cheese is melted and slightly golden.
  7. Remove from the oven, drizzle with lemon juice, and garnish with fresh parsley before serving.
