Ingredients

  • Arborio rice - 150 grams
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • White wine - 100 ml
  • Shrimp - 100 grams, peeled and deveined
  • Mussels - 100 grams, cleaned
  • Calamari - 100 grams, sliced
  • Cherry tomatoes - 100 grams, halved
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a saucepan, heat the vegetable broth over low heat and keep it warm.
  2. In a separate large skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
  3. Add the minced garlic to the skillet and cook for an additional minute until fragrant.
  4. Stir in the Arborio rice and toast for 1-2 minutes, ensuring the rice is well-coated with oil.
  5. Pour in the white wine and stir until it's mostly absorbed by the rice.
  6. Begin adding the warm vegetable broth, one ladle at a time, stirring frequently until each addition is absorbed before adding the next, about 18-20 minutes.
  7. When the rice is creamy and al dente, add the shrimp, mussels, and calamari to the risotto. Cook for about 5 minutes until the seafood is cooked through.
  8. Stir in the halved cherry tomatoes, chopped parsley, lemon juice, and season with salt and black pepper to taste.
  9. Remove from heat and fold in the crumbled feta cheese before serving.
