- Arborio rice - 150 grams
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- White wine - 100 ml
- Shrimp - 100 grams, peeled and deveined
- Mussels - 100 grams, cleaned
- Calamari - 100 grams, sliced
- Cherry tomatoes - 100 grams, halved
- Fresh parsley - 2 tablespoons, chopped
- Feta cheese - 50 grams, crumbled
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a saucepan, heat the vegetable broth over low heat and keep it warm.
- In a separate large skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
- Add the minced garlic to the skillet and cook for an additional minute until fragrant.
- Stir in the Arborio rice and toast for 1-2 minutes, ensuring the rice is well-coated with oil.
- Pour in the white wine and stir until it's mostly absorbed by the rice.
- Begin adding the warm vegetable broth, one ladle at a time, stirring frequently until each addition is absorbed before adding the next, about 18-20 minutes.
- When the rice is creamy and al dente, add the shrimp, mussels, and calamari to the risotto. Cook for about 5 minutes until the seafood is cooked through.
- Stir in the halved cherry tomatoes, chopped parsley, lemon juice, and season with salt and black pepper to taste.
- Remove from heat and fold in the crumbled feta cheese before serving.
