Ingredients

  • Basmati rice - 150 grams
  • Olive oil - 2 tablespoons
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Red bell pepper, diced - 1 small
  • Tomato, diced - 1 medium
  • Sea salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Fish stock - 400 ml
  • Shrimp, peeled and deveined - 100 grams
  • Calamari, sliced - 100 grams
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon wedges - for serving

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a large skillet or pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and diced red bell pepper to the skillet, cooking for an additional 2-3 minutes until fragrant.
  4. Stir in the diced tomato, sea salt, black pepper, paprika, and dried oregano. Cook for another 3 minutes until the tomatoes soften.
  5. Drain the soaked rice and add it to the skillet, stirring well to coat the rice with the mixture.
  6. Pour in the fish stock and bring the mixture to a boil. Reduce heat to low, cover, and simmer for 15 minutes.
  7. After 15 minutes, add the shrimp and calamari to the rice, gently stirring to combine. Cover and cook for another 5 minutes until the seafood is cooked through.
  8. Remove from heat, fluff the rice with a fork, and stir in the chopped parsley.
  9. Serve hot with lemon wedges on the side for drizzling.
