- Basmati rice - 150 grams
- Olive oil - 2 tablespoons
- Onion, finely chopped - 1 medium
- Garlic, minced - 2 cloves
- Red bell pepper, diced - 1 small
- Tomato, diced - 1 medium
- Sea salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
- Dried oregano - 1 teaspoon
- Fish stock - 400 ml
- Shrimp, peeled and deveined - 100 grams
- Calamari, sliced - 100 grams
- Fresh parsley, chopped - 2 tablespoons
- Lemon wedges - for serving
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a large skillet or pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced red bell pepper to the skillet, cooking for an additional 2-3 minutes until fragrant.
- Stir in the diced tomato, sea salt, black pepper, paprika, and dried oregano. Cook for another 3 minutes until the tomatoes soften.
- Drain the soaked rice and add it to the skillet, stirring well to coat the rice with the mixture.
- Pour in the fish stock and bring the mixture to a boil. Reduce heat to low, cover, and simmer for 15 minutes.
- After 15 minutes, add the shrimp and calamari to the rice, gently stirring to combine. Cover and cook for another 5 minutes until the seafood is cooked through.
- Remove from heat, fluff the rice with a fork, and stir in the chopped parsley.
- Serve hot with lemon wedges on the side for drizzling.
