Ingredients

  • Zucchini - 2 medium, spiralized
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Cherry tomatoes - 200 grams, halved
  • Shrimp - 200 grams, peeled and deveined
  • Mussels - 200 grams, cleaned
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Stir in cherry tomatoes and cook for about 5 minutes until they start to soften.
  4. Add shrimp and mussels to the skillet, along with oregano, salt, and pepper.
  5. Cover the skillet and cook for 5-7 minutes until the shrimp are pink and mussels have opened.
  6. While the seafood cooks, spiralize the zucchini into noodles.
  7. Once the seafood is cooked, remove the lid and add the zucchini noodles.
  8. Toss everything together and cook for an additional 2-3 minutes until the zucchini noodles are tender.
  9. Remove from heat, stir in lemon juice and chopped parsley before serving.
