Ingredients

  • Orzo pasta - 150 grams
  • Raw shrimp - 150 grams, peeled and deveined
  • Calamari rings - 100 grams
  • Cherry tomatoes - 100 grams, halved
  • Spinach - 50 grams, fresh
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the orzo according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the shrimp and calamari to the skillet, cooking for 3-4 minutes until the shrimp turns pink and the calamari is opaque.
  4. Stir in the halved cherry tomatoes and fresh spinach, cooking for another 2-3 minutes until the spinach wilts.
  5. Add the cooked orzo to the skillet, along with lemon juice, salt, and black pepper. Toss everything together until well combined and heated through.
  6. Remove from heat and stir in the crumbled feta cheese and fresh parsley before serving.
