- Raw shrimp - 150 grams, peeled and deveined
- Calamari rings - 100 grams
- Cherry tomatoes - 100 grams, halved
- Spinach - 50 grams, fresh
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Feta cheese - 50 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the orzo according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add the shrimp and calamari to the skillet, cooking for 3-4 minutes until the shrimp turns pink and the calamari is opaque.
- Stir in the halved cherry tomatoes and fresh spinach, cooking for another 2-3 minutes until the spinach wilts.
- Add the cooked orzo to the skillet, along with lemon juice, salt, and black pepper. Toss everything together until well combined and heated through.
- Remove from heat and stir in the crumbled feta cheese and fresh parsley before serving.
