Ingredients

  • Eggplant - 1 medium, sliced
  • Salt - 1 tsp
  • Olive oil - 3 tbsp
  • Onion - 1, finely chopped
  • Garlic - 2 cloves, minced
  • Shrimp - 150 grams, peeled and deveined
  • White fish (e.g., cod) - 150 grams, diced
  • Tomatoes - 2 medium, chopped
  • Oregano - 1 tsp, dried
  • Black pepper - 1/2 tsp
  • Feta cheese - 100 grams, crumbled
  • Egg - 1, beaten
  • Milk - 200 ml
  • Butter - 30 grams
  • Flour - 30 grams
  • Nutmeg - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Sprinkle salt over the sliced eggplant and let it sit for 20 minutes to remove excess moisture.
  3. Rinse the eggplant slices and pat them dry with a paper towel.
  4. Heat 2 tablespoons of olive oil in a pan over medium heat and sauté the onion until translucent, about 5 minutes.
  5. Add garlic and cook for an additional minute, then add shrimp and white fish, sautéing until just cooked, about 4-5 minutes.
  6. Stir in chopped tomatoes, oregano, black pepper, and cook for another 5 minutes until the mixture thickens. Remove from heat.
  7. In a separate saucepan, melt butter over medium heat, then whisk in the flour to create a roux, cooking for 1-2 minutes.
  8. Gradually whisk in the milk, stirring constantly until the mixture thickens. Add nutmeg and remove from heat.
  9. Stir half of the beaten egg and half of the feta cheese into the béchamel sauce.
  10. In a baking dish, layer half of the eggplant slices, followed by the seafood mixture, and then another layer of eggplant.
  11. Pour the béchamel sauce over the top and sprinkle with the remaining feta cheese.
  12. Bake in the preheated oven for 30-35 minutes, or until golden and bubbly.
  13. Let it cool for a few minutes before serving.
