- Eggplant - 1 medium, sliced
- Salt - 1 tsp
- Olive oil - 3 tbsp
- Onion - 1, finely chopped
- Garlic - 2 cloves, minced
- Shrimp - 150 grams, peeled and deveined
- White fish (e.g., cod) - 150 grams, diced
- Tomatoes - 2 medium, chopped
- Oregano - 1 tsp, dried
- Black pepper - 1/2 tsp
- Feta cheese - 100 grams, crumbled
- Egg - 1, beaten
- Milk - 200 ml
- Butter - 30 grams
- Flour - 30 grams
- Nutmeg - a pinch
Steps
- Preheat the oven to 180°C (350°F).
- Sprinkle salt over the sliced eggplant and let it sit for 20 minutes to remove excess moisture.
- Rinse the eggplant slices and pat them dry with a paper towel.
- Heat 2 tablespoons of olive oil in a pan over medium heat and sauté the onion until translucent, about 5 minutes.
- Add garlic and cook for an additional minute, then add shrimp and white fish, sautéing until just cooked, about 4-5 minutes.
- Stir in chopped tomatoes, oregano, black pepper, and cook for another 5 minutes until the mixture thickens. Remove from heat.
- In a separate saucepan, melt butter over medium heat, then whisk in the flour to create a roux, cooking for 1-2 minutes.
- Gradually whisk in the milk, stirring constantly until the mixture thickens. Add nutmeg and remove from heat.
- Stir half of the beaten egg and half of the feta cheese into the béchamel sauce.
- In a baking dish, layer half of the eggplant slices, followed by the seafood mixture, and then another layer of eggplant.
- Pour the béchamel sauce over the top and sprinkle with the remaining feta cheese.
- Bake in the preheated oven for 30-35 minutes, or until golden and bubbly.
- Let it cool for a few minutes before serving.
