Ingredients

  • Olive oil - 2 tablespoons
  • Onion, diced - 1 medium (about 150 grams)
  • Garlic, minced - 2 cloves
  • Red bell pepper, diced - 1 small (about 100 grams)
  • Zucchini, diced - 1 small (about 150 grams)
  • Canned diced tomatoes - 400 grams
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Mixed seafood (shrimp, mussels, calamari) - 250 grams
  • Feta cheese, crumbled - 100 grams
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Breadcrumbs - 2 tablespoons

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, diced red bell pepper, and zucchini, cooking for an additional 5 minutes until softened.
  4. Add the canned diced tomatoes, dried oregano, dried thyme, salt, and black pepper. Simmer for about 10 minutes, allowing the flavors to meld.
  5. Fold in the mixed seafood and cook for another 5 minutes until the seafood is just cooked through.
  6. Remove from heat and stir in the crumbled feta cheese, chopped parsley, and lemon juice.
  7. Transfer the mixture into a baking dish and sprinkle breadcrumbs evenly over the top.
  8. Bake in the preheated oven for 15-20 minutes, or until the breadcrumbs are golden brown and crispy.
  9. Remove from the oven and let cool for a few minutes before serving.
