- Zucchini, diced - 1 small (about 150 grams)
- Canned diced tomatoes - 400 grams
- Dried oregano - 1 teaspoon
- Dried thyme - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Mixed seafood (shrimp, mussels, calamari) - 250 grams
- Feta cheese, crumbled - 100 grams
- Fresh parsley, chopped - 2 tablespoons
- Lemon juice - 1 tablespoon
- Breadcrumbs - 2 tablespoons
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, diced red bell pepper, and zucchini, cooking for an additional 5 minutes until softened.
- Add the canned diced tomatoes, dried oregano, dried thyme, salt, and black pepper. Simmer for about 10 minutes, allowing the flavors to meld.
- Fold in the mixed seafood and cook for another 5 minutes until the seafood is just cooked through.
- Remove from heat and stir in the crumbled feta cheese, chopped parsley, and lemon juice.
- Transfer the mixture into a baking dish and sprinkle breadcrumbs evenly over the top.
- Bake in the preheated oven for 15-20 minutes, or until the breadcrumbs are golden brown and crispy.
- Remove from the oven and let cool for a few minutes before serving.
