Ingredients
- Cauliflower - 300 grams
- Egg - 1 large
- Almond flour - 50 grams
- Mozzarella cheese (shredded) - 100 grams
- Olive oil - 1 tablespoon
- Garlic (minced) - 2 cloves
- Shrimp (peeled and deveined) - 100 grams
- Calamari rings - 100 grams
- Ouzo - 2 tablespoons
- Cherry tomatoes (halved) - 100 grams
- Fresh parsley (chopped) - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Feta cheese (crumbled) - 30 grams
Steps
- Preheat the oven to 220°C (428°F).
- To make the cauliflower crust, steam the cauliflower florets until tender, about 5-7 minutes. Drain and let cool.
- Once cool, pulse the cauliflower in a food processor until it resembles rice. Transfer to a clean kitchen towel and squeeze out excess moisture.
- In a bowl, mix the cauliflower, egg, almond flour, mozzarella cheese, salt, and pepper until well combined.
- Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a round pizza crust. Bake for 15-20 minutes until golden brown.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add the shrimp and calamari to the skillet and cook for 3-4 minutes until cooked through. Pour in the ouzo and let it simmer for 1-2 minutes to reduce slightly.
- Remove the skillet from heat and stir in the cherry tomatoes and chopped parsley.
- Remove the crust from the oven, top with the seafood mixture, and sprinkle crumbled feta cheese on top.
- Return to the oven and bake for an additional 5-7 minutes until heated through and the cheese is slightly melted.
- Slice and serve hot, garnished with additional parsley if desired.
