Ingredients

  • Cauliflower - 300 grams
  • Egg - 1 large
  • Almond flour - 50 grams
  • Mozzarella cheese (shredded) - 100 grams
  • Olive oil - 1 tablespoon
  • Garlic (minced) - 2 cloves
  • Shrimp (peeled and deveined) - 100 grams
  • Calamari rings - 100 grams
  • Ouzo - 2 tablespoons
  • Cherry tomatoes (halved) - 100 grams
  • Fresh parsley (chopped) - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese (crumbled) - 30 grams

Steps

  1. Preheat the oven to 220°C (428°F).
  2. To make the cauliflower crust, steam the cauliflower florets until tender, about 5-7 minutes. Drain and let cool.
  3. Once cool, pulse the cauliflower in a food processor until it resembles rice. Transfer to a clean kitchen towel and squeeze out excess moisture.
  4. In a bowl, mix the cauliflower, egg, almond flour, mozzarella cheese, salt, and pepper until well combined.
  5. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a round pizza crust. Bake for 15-20 minutes until golden brown.
  6. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  7. Add the shrimp and calamari to the skillet and cook for 3-4 minutes until cooked through. Pour in the ouzo and let it simmer for 1-2 minutes to reduce slightly.
  8. Remove the skillet from heat and stir in the cherry tomatoes and chopped parsley.
  9. Remove the crust from the oven, top with the seafood mixture, and sprinkle crumbled feta cheese on top.
  10. Return to the oven and bake for an additional 5-7 minutes until heated through and the cheese is slightly melted.
  11. Slice and serve hot, garnished with additional parsley if desired.
