Ingredients

  • Cauliflower - 300 grams
  • Egg - 1 large
  • Almond flour - 50 grams
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Shrimp - 100 grams, peeled and deveined
  • Calamari - 100 grams, sliced
  • Cherry tomatoes - 100 grams, halved
  • Feta cheese - 50 grams, crumbled
  • Fresh oregano - 1 tablespoon, chopped
  • Fresh parsley - 1 tablespoon, chopped
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your oven to 220°C (425°F).
  2. Prepare the cauliflower crust by steaming the cauliflower florets until tender (about 5-7 minutes), then drain and cool.
  3. Once cooled, pulse the cauliflower in a food processor until it resembles rice.
  4. In a bowl, combine the cauliflower rice, almond flour, egg, olive oil, salt, and pepper. Mix well to form a dough.
  5. Spread the cauliflower dough onto a parchment-lined baking tray in a round shape, about 1/2 cm thick.
  6. Bake the crust for 15-20 minutes or until golden and firm.
  7. While the crust is baking, heat a skillet over medium heat and add a tablespoon of olive oil.
  8. Add the minced garlic and sauté for 1 minute until fragrant, then add the shrimp and calamari. Cook for 3-4 minutes until the seafood is opaque and cooked through.
  9. Remove the skillet from heat and stir in the cherry tomatoes, feta cheese, oregano, parsley, and lemon juice.
  10. Once the crust is done baking, remove it from the oven and evenly distribute the seafood mixture over the top.
  11. Return the pizza to the oven and bake for an additional 5-10 minutes until heated through.
  12. Slice and serve warm, garnished with extra herbs if desired.
