Ingredients
- Cauliflower - 300 grams
- Egg - 1 large
- Almond flour - 50 grams
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Shrimp - 100 grams, peeled and deveined
- Calamari - 100 grams, sliced
- Cherry tomatoes - 100 grams, halved
- Feta cheese - 50 grams, crumbled
- Fresh oregano - 1 tablespoon, chopped
- Fresh parsley - 1 tablespoon, chopped
- Garlic - 2 cloves, minced
- Lemon juice - 1 tablespoon
Steps
- Preheat your oven to 220°C (425°F).
- Prepare the cauliflower crust by steaming the cauliflower florets until tender (about 5-7 minutes), then drain and cool.
- Once cooled, pulse the cauliflower in a food processor until it resembles rice.
- In a bowl, combine the cauliflower rice, almond flour, egg, olive oil, salt, and pepper. Mix well to form a dough.
- Spread the cauliflower dough onto a parchment-lined baking tray in a round shape, about 1/2 cm thick.
- Bake the crust for 15-20 minutes or until golden and firm.
- While the crust is baking, heat a skillet over medium heat and add a tablespoon of olive oil.
- Add the minced garlic and sauté for 1 minute until fragrant, then add the shrimp and calamari. Cook for 3-4 minutes until the seafood is opaque and cooked through.
- Remove the skillet from heat and stir in the cherry tomatoes, feta cheese, oregano, parsley, and lemon juice.
- Once the crust is done baking, remove it from the oven and evenly distribute the seafood mixture over the top.
- Return the pizza to the oven and bake for an additional 5-10 minutes until heated through.
- Slice and serve warm, garnished with extra herbs if desired.
