- Sea bass fillet - 300 grams
- Olive oil - 3 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1 medium, chopped
- Carrot - 1 medium, diced
- Tomatoes - 2 medium, diced
- Bell pepper - 1 medium, chopped
- Parsley - 2 tablespoons, chopped
- Oregano - 1 teaspoon, dried
- Lemon juice - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add the diced carrot and bell pepper to the skillet, cooking for about 5 minutes until softened.
- Stir in the diced tomatoes, oregano, salt, and pepper. Cook the mixture for another 5 minutes until the tomatoes break down slightly.
- In a baking dish, place the sea bass fillet and pour the vegetable mixture over the top.
- Drizzle the remaining olive oil and lemon juice over the dish, and sprinkle with chopped parsley.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 5-10 minutes, allowing the top to brown slightly.
- Serve warm, garnished with additional parsley if desired.
