Ingredients

  • Sea bass fillet - 300 grams
  • Olive oil - 3 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, chopped
  • Carrot - 1 medium, diced
  • Tomatoes - 2 medium, diced
  • Bell pepper - 1 medium, chopped
  • Parsley - 2 tablespoons, chopped
  • Oregano - 1 teaspoon, dried
  • Lemon juice - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  3. Add the diced carrot and bell pepper to the skillet, cooking for about 5 minutes until softened.
  4. Stir in the diced tomatoes, oregano, salt, and pepper. Cook the mixture for another 5 minutes until the tomatoes break down slightly.
  5. In a baking dish, place the sea bass fillet and pour the vegetable mixture over the top.
  6. Drizzle the remaining olive oil and lemon juice over the dish, and sprinkle with chopped parsley.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  8. Remove the foil and bake for an additional 5-10 minutes, allowing the top to brown slightly.
  9. Serve warm, garnished with additional parsley if desired.
